- Chocolate protein powder: Make sure you’re using whey protein powder for this recipe!
- Maple syrup: Maple is my go-to natural sweetener, and it adds amazing deep, rich flavor.
- Cocoa powder: This helps make this brownie extra fudgy and chocolate-y.
- Egg white: The egg white is crucial because it adds protein without adding density from the egg yolk. I’ve tested this with just an egg white and with a full egg, and the yolk made the brownie too dense.

How to Make A Single-Serve Cottage Cheese Brownie
- Combine ingredients: Add all of the ingredients but the chocolate chips to a blender, and blend until smooth.
- Pour the batter into the ramekin and top with chocolate chips. Bake for 22-25 minutes at 350ºF.
- Remove from the oven and let cool for a few minutes before serving.
- Serve and enjoy! Top with your favorite brownie toppings, and enjoy!

Ingredients
- ⅓ cup cottage cheese
- 1 large egg white
- ¼ cup chocolate whey protein powder, I used Naked Whey
- 1 tablespoon cocoa powder
- ¼ teaspoon baking powder
- 3 tablespoons maple syrup
- ½ tablespoons mini chocolate chips
Instructions

Preheat the oven to 350ºF and spray an 8 oz. ramekin with non-stick cooking spray.

Add all of the ingredients but the chocolate chips to a blender. Blend until smooth.

Pour the batter into the ramekin and top with chocolate chips. Bake for 22-25 minutes or until baked through.*

Remove from the oven and let cool for a few minutes before serving.

Tips & Notes
- If you would like this brownie to be similar to a lava cake with a molten middle, remove the cake from the oven a few minutes early.
