  • Maple syrup: Maple is my go-to natural sweetener, and it adds amazing deep, rich flavor.
  • Cocoa powder: This helps make this brownie extra fudgy and chocolate-y.
  • Egg white: The egg white is crucial because it adds protein without adding density from the egg yolk. I’ve tested this with just an egg white and with a full egg, and the yolk made the brownie too dense.

How to Make A Single-Serve Cottage Cheese Brownie

  1. Combine ingredients: Add all of the ingredients but the chocolate chips to a blender, and blend until smooth. 
  2. Pour the batter into the ramekin and top with chocolate chips. Bake for 22-25 minutes at 350ºF.
  3. Remove from the oven and let cool for a few minutes before serving.
  4. Serve and enjoy! Top with your favorite brownie toppings, and enjoy!

How to Serve It

  • Scoop of vanilla yogurt or vanilla ice cream
  • Dollop of homemade whipped cream
  • Drizzle of melted chocolate

  • Preheat the oven to 350ºF and spray an 8 oz. ramekin with non-stick cooking spray.
  • Add all of the ingredients but the chocolate chips to a blender. Blend until smooth.

Tips & Notes

  • If you would like this brownie to be similar to a lava cake with a molten middle, remove the cake from the oven a few minutes early.
